Paolo Boscaro, a Michelin-starred chef, is currently at the helm of the restaurant ‘Les Foudres’ at the Chais Monnet & Spa hotel in Cognac, and has joined forces with the restaurant ‘Le Lacaussade’ to create its menu. So, together with chef Joey Atchama, Paolo Boscaro has concocted a menu of French-inspired cuisine enriched by the diversity of local products.
The menu’s very essence is inspired by the many tastes and flavours from the surrounding natural environment. Your taste buds will adventure further, as you discover new natural flavours and processes to enhance and preserve raw ingredients. Local organic farmers provide produce from the surrounding area and vegetables are grown in the hotel’s own kitchen garden.
